  • Amino acidsAmino acids: Consuming a meal consisting of amaranth alone may result in a post-meal drop in the essential amino acids leucine and threonine (47).
  • GlucoseGlucose: Amaranth has been shown to lower blood glucose levels in animals (13; 14).
  • LipidsLipids: Amaranth has been shown to reduce serum cholesterol and triglyceride levels, in addition to the fatty acid composition of the membranes of erythrocytes (3).
